When the weather is cold and Raining it’s a perfect time to make soup. It’s cosy and hearty comfort meal to enjoy, I love holding a big soup cup and cuddle up keeping warm and relaxing while I enjoy my soup. The soup I made is pumpkin soup with butternut pumpkin, onion , garlic, green Granny Smith Apple’s, crystallised ginger, pinch of curry powder with vegetable stock. When I serve my soup I sprinkle some fresh curly parsley and swirl some sour cream. I also made mini croissants with puff pastry with butter and mix herbs to dip into my soup they are so delightful and delicious to have with your soup. Enjoy your day Lisa ????????.

RECIPE
1 tablespoon of olive oil
2 Butternut pumpkin (peeled and cut in big cubes)
1 big yellow onion (cut in four’s)
4 garlic (crushed)
2 Granny Smith Green Apple’s
1 teaspoon of curry powder
4 ginger crystallised
500 Liters of vegetable stock
Pinch of salt and pepper

METHOD
1. Big pot on medium heat, warm up the oil then add onion, garlic, ginger crystal’s till onion and garlic goe’s golden.
2. Add the pumkin and Apple’s combine together, till the pumkin almost soft.
3. Add vegetable stock combine together on low heat add pinch of salt and pepper and cook for extra 15mins.
4. Use a blender to smooth the soup till thick and smooth.
